Creamy Red Lentil Dahl

This delicious Dahl is one of my all time go to comfort meals! Adding the coconut cream and maple syrup, just creates that sweet creamy depth.

It is extra versatile in the way you can dish it up; With rice and naan bread the first night; then with any left overs you could either: covered over a baked sweet potato, mix through pasta or make a pie out of it.

Ingredients

  • 2 tbs olive oil

  • 1 medium onion

  • 2 cloves garlic - crushed

  • 1 tsp crushed ginger

  • 2 tsp turmeric

  • 1/2 tsp coriander powder

  • 1/2 tsp cinnamon

  • 1 tsp curry powder

  • 2 tbs maple syrup

  • 2 cups dried red lentils

  • 3 cups vegetable stock

  • 1 can of coconut cream

  • Vegetable options: Sliced carrots, mushrooms, cauliflower or cubed tofu.

  • sauté onions, garlic and ginger

  • add spices, red lentils and vegetables - stir and sauté for a couple of minutes to mix the spices through

  • add vegetable stock and coconut cream - stir to combine

  • simmer until lentils and vegetables are cooked - approx. 30 minutes

Dish up with rice, squeeze of lemon juice, dollop of coconut yogurt and chopped coriander.
