Creamy Tomato Pasta
This creamy tomato pasta is so delicious and quick and super easy to make.
Budget friendly also and perfect for that mid week dinner.
The sauce freezes really well and is also yummy drizzled over roasted kumaras :)
Use which ever pasta takes your fancy. Ellarose and I are quite partial to pappardelle or rigatoni :)
INGREDIANTS:
* 1 tbs olive oil
* 1 tbs vegan butter
* 1 onion
* 2 garlic cloves
* 1 can chopped tomatoes
* 1/2 cup water
* 1 tbs maple syrup - use less or more depending on your sweetness ;)
* 1/2 cup of coconut cream
* salt and pepper
* pasta of your choice
* Vegan parmesan and basil to serve
METHOD:
* Saute onion in butter and oil
* add chopped garlic - saute for around 1 min
* add chopped tomato's and 1/2 cup of
water and coconut cream
* season with salt and pepper
* simmer for around 10 minutes
* blend until smooth
* Add cooked pasta to sauce and top with parmesan and chopped basil.
